These are the cupcakes from last night now covered with marshmallow, coated with melted chocolate and given a liberal dusting of sprinkles!

 

 

 

 

 

 

Homemade Marshmallow

Ingredients:
2 Tbsp powdered gelatine
1/2 cup (125ml) cold water
1/2 cup (125ml) boiling water
2 tsp vanilla essence
2 cups (500g) castor sugar

Chocolate Cupcakes
Makes: 24
Ingredients
125g soft margarine
2 tsp vanilla essence
300g castor sugar
3 large eggs
60g cocoa powder
125ml hot water
125ml warm milk
2 cups cake flour
2 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt

Summer Salad

Serves: 4-6

Guest always exclaim over this light and colourful summer salad, with its unusual flower garnish. The watercress and rockets belong to the group of dark green leefy special vegetables so eat up.

On cooking rice ...

50 grams of uncooked rice will make 1 cup of cooked rice when steamed in the microwave.

Royal Icing

Makes: 12-20 crumpets depending on size.

Ingredients
1 cup flour
1/2 cup milk
1 egg
1 tsp baking powder

Basic Ingredients:
125g Rama Margarine
1 cup caster sugar
2 cups flour
1 jumbo egg
2 tsp vanilla essence

Method:

Chocolate Ganache

Ingredients
100g Dark Albany eating chocolate
1/3 cup (80ml) cream

Method
Melt Albany chocolate and cream together over gentle heat and stir until uniformly blended.
Leave to cool and thicken.
Pour and spread over cake/cupcakes and leave to set.
